Ummmm Meatloaf!!

Oh how I love meatloaf. You can pretty much add anything and it tastes great. So last night I tried a few different things to see how it worked out. My 8 year thought it was great!! So here is the recipe. Share with me the different things that you have tried in Meatloaf!!



Preheat the oven at 425

I used the following.....

-2lbs of Ground Beef
-1 egg
-1 can of Rotel Diced Tomatoes with Chilles (if you have been couponing for a while, you should have tons of these!!!)
-half cup of Sour Cream
-half of cup of Shredded Cheddar Cheese
-one bag of Lipton's vegetable dip mix
-Salt and Pepper to taste

I make mine a litter thinner, about 1 to 2 inches thick. I think it takes less time to cook and I don't have to worry about the sides getting dried out while I am still trying to get the middle done. I cooked it about 40 minutes, again it will depend on how thick you like yours.

Have leftovers? Slice your meatloaf and add it to some bread for tomorrows lunch!!

Ways To Save-Grow Your Own Garden

So with spring right around the corner, all I have been thinking about lately is getting out in the yard and getting our garden started.

Last year was our first year and I think it went pretty well. Above is a picture of our tomatoes when they first started growing. We did start a little late last year so it was late fall before our corn and watermelon came in. They were small but it was our year of learning. Peppers, tomatoes, jalapenos and onions did really good. It was not a huge garden but we wanted to see what would grow.

This year I have big plans. I have already made a list of the fruit and vegetables that we want in the garden and I am most likely going to start some soon in the house from seeds. So do want you own garden? Here are some benefits and some tips to having your own.

• Saving Money!! This is the biggest benefit to having your own garden. Our girls eat tomatoes like crazy. I use to buy a large container of tomatoes every week. With our garden, last summer We did not buy a single tomato!!
• Fresh Produce!! Having fresh fruit and vegetables available are better for you and your family. Plus it is a good thing for the environment!!
• Saving Time!! Not having to run to the store to get a tomato or cucumber for your salad or garlic for that spaghetti sauce or strawberries for that cheesecake is ideal. It is so nice to walk out to the garden and just pick what you need!
• Don't think you have the space? Make a list of a few fruits or vegetables that you would like to have. Talk to your friends, family or neighbors and see if they would be interested in starting a small garden and you can trade. There are many gardens that could be easily maintained in a very small place or in containers. Balconies, patios, window ledges are all great. You just need sun and water.
• Try Something New!! Having your own garden is a great way to try new fruits and vegetables without the cost. There are many vegetables that I would like to try, but they are very expensive. I would hate to buy it and then hate it, such a waste of money. Buy a pack of seeds for around a $1 or $2 and then planting them is a lot cheaper. Once it is ready to harvest, try it, then if you don't like it you are only out a $1 or $2. Plus is you are trading with someone you can share these items!!
• Save Your Seeds!! Knowing that we were planting again this year, I started saving seeds from fruits and vegetables that were eating over the last 6 months. Watermelons, peppers, cucumbers etc all have seeds that are easy to remove and store until you want to plant them. I would remove them from the fruit or vegetable, place them on a napkin and let them dry out for about a 2-3 days. Then I placed them in a envelope, sealed it and then wrote on the envelope what they were. When I am ready to use them, just open the envelope and plant the seeds. FREE seeds are nice!!
• Family Time!! And if all of this is not good enough. Having your own garden gets you and your family outside working together. It is nice to see our little girls digging in the dirt and picking their own fruit and vegetables. They think it is so cool that we have our own garden. It teaches our girls responsibility as well. They know that they have to water and maintain the garden. Spending time with my family is the best benefit.

So get started!! Think about what you would like to have in your garden and before you know it, it will be time to start planting and getting fresh fruit and veggies from your back yard.

Ways To Earn- J & R Market Reserach- Cincinnati Area

Here is another market research company that I use on a regular basis.

J & R Coordinating is a local (Cincinnati) market research company. I just love this company!! I signed up last summer and I get calls and emails from them all the time. Unlike a few other local companies, I almost always qualify for the study.

They offer such a great range of studies that anyone can work with them. I have done hair care studies where you use a product for a few weeks, tell them what you think about it and get paid!! I have tried orange juice, crackers and chips, etc. I love it. I have even done a study with our oldest daughter and she got paid as well. She is 8 and thought it was so cool that she got to tell people what she thought about the product. I have been paid anywhere from $10-$70. They do offer other studies that pay a significant amount of money, but alot of them are usually several visits over a week maybe 2. With having 3 kids and the crazy schedule we have, the times have never worked out. Some can pay several hundred dollars, depending on the study.

It is very simple, just sign up here. Within a few weeks you will start seeing emails and getting phone calls from them. They are super nice and usually very helpful.

I Can Freeze What?

There are many things that you can freeze! With getting ready for my Bulk Cooking Day, I have been checking through old recipes and notes that I have made over the years of things that freeze well. Here are a few I thought you may want to try...

All fruits and vegetables should be washed before freezing.

• Cheese- bars, sliced or shredded- If you are making a cheese tray I would not use frozen cheese, you can taste a little difference after it has been frozen. Most of the frozen cheeses I use for cooking- grilled cheese, manicotti, lasagna, toppings on cooked foods, etc.
• Canned Biscuits
• Eggs- whisk together, put into ice trays, freeze, remove from ice tray and store in zip lock bags until needed up to 6months, refrigerate to thaw
• Hot Dogs
• Yogurt or Gogurts
• Cookie Dough
• Butter
• Bread
• Dinner Rolls
• Garlic and Ginger
• Tomatoes
• Fruit- Oranges and Berries
• Vegetables- (cook these for 2-3 minutes and then cool before freezing- peas, broccoli, celery, spinach, corn (remove from cob), carrot) good for 4-6 months
• Onions- peel and chop- good for 2-3 months
• Peppers- cut and remove seeds

Vegetables in a zip lock bag with seasoning and or butter are great. When you start dinner you can pull out as many you need and pop them in a pan and reheat, they are basically finished, no prep time. This is great if you have older kids or a husband that has to cook on their own. They just pull out what ones they want and reheat in a pot. You did all the work but they can help fix dinner. (Think Green Giant Steamers, just made with fresh products you prepared-great if you have a garden and want to keep some of the fresh items you grew!)

Homemade items freeze very well also. Here are a few to try……

• Muffins
• Biscuits or Dinner Rolls
• Pancakes or Waffles
• Lasagna
• Manicotti
• Any meats- Chicken, Hamburger, Pork Chops, Ribs, etc.
• Vegetable Soup (don’t add potatoes if you are going to freeze it, they taste different after they have been frozen- I will usually cut up some the day that I reheat it and add it to it, cook until they are soft)
• Chicken Noodle Soup
• Spaghetti Sauces
• Cakes (just wait to ice them until you want to eat them)
• Tuna , Chicken or Ham Salad (go easy on the mayo, mayo tends to separate when frozen)
  

A lot of the items above can be made in advance and then just reheated when you need them. This will save you time and money. There use to be so many times that I would want something to eat for breakfast, say pancakes, but I knew we were in a hurry and I would not have time to make them. So we would leave a few minutes early and just stop at McDonald's or somewhere to grab breakfast. If you have pancakes already made then just pop a few in the microwave and that’s it, breakfast in just the time it takes to reheat in the microwave. Time and Money saved!!!

Don’t Freeze

• Mayo (tends to separate, if your recipe calls for it, try to use as little as possible)
• Potatoes
• Sour Cream
  
  These are all items that I have used and tried. As I find more items that freeze well I will add them to this list. You can check out this list at any time, I will have it at the top of the page as I Can Freeze What?

FYI........
According to Thrifty Puppy.......
You can freeze milk as well...just make sure you pour a little out before sticking it in the freezer. Otherwise, it will expand when it freezes and bust the carton.

Happy Valentines Day- Recipe Swap!

Pink Heart Shaped Pancakes!

This is easy. I just used regular pancake mix from Krusteaz, just add water. To get the pink is easy! You can either add red food coloring or if you have the crystal like red toppings that you usually put on sugar cookie (that is what I used). Just add enough to get the pink color.

To get the heart shape, just take a spoon and draw an outline of a heart with the batter.

Then fill in the empty part with extra batter. This is very easy, but I did have a few that did not look like a heart (more like a blob)!!

So even with all of our girls birthday being in June and July we still have 3 separate birthday parties. It is their special day and we make that day all about them. But sometimes that can be very costly and with all 3 Birthdays in a 6 week period, it hurts the budget all at once. So I have been trying to come up with a few money saving ideas.

One way that I found, is to use Smile Box. You can create birthday cards, invites, videos, thank you cards and much more all for FREE. With all of our family and friends either using email or on social networks I thought this year I would send them via email or FaceBook.

So this is what I created below. ( For friends and family- I am still working out the details of her party, so once I get that all planned I will send you the updated version of her invitation. This is to show how easy and quick it was to make one.)

So after looking into Bulk cooking for about 2 weeks now, I set a date. February 21 I am planning to cook 30 meals. I am working on getting a menu for March and a list of all the ingredients that I will need. Once I get it all planned I will share. I will also post pictures while I am cooking that day. If you have not heard of Bulk Cooking, here is how it works.

• Plan a menu for 30 days (My plan is to double or triple some of the meals that I know my family likes and just spread them out throughout the month)
• List all the ingredients that you will need for those 30 meals, also purchase enough Ziploc bags to store all of these dinners
• Pick a day to cook. Most likely this will take at least 10-12 hours so make sure to clear your schedule since you will be in the kitchen most of the day
• Pick a variety of meals so that you and your family do not get burned out. Find meals that you can cook a large amount of a certain meat and use it for several meals. Ground beef is great for tacos, meatloaf, meatballs and so much more.
• Get your shopping done
• Start Cooking!!!
